Truncated Tanks
- Adapted to red winemaking, the truncated shape allows to marc's cap to loosen itself during rackings and to proceed to softer extractions.
- Conversely the reverse truncated shape allows to marc's cap to collapse itself during rackings, under the pressure effect, reducing the pumping over number needed.
